It comes from the jowl instead of the belly; it's a different shape than the bacon you're used to, but the same kind of great taste as our other uncured bacon. There's nothing but a sea salt brine on this bacon - no naturally-occurring nitrates from vegetable powder.
This usually comes about .5 pound per vacuum-sealed pack. All our meats are frozen.
