Shiitake mushrooms have been used in Asia for thousands of years as a natural medicine. Animal studies have found anti-tumor, cholesterol-lowering, and virus-inhibiting effects in shiitake mushrooms.
Storage: Keep refrigerated in a paper bag or covered with a damp paper towel. Will last 7 to 10 days, but it's best to eat promptly. If you don't eat all your mushrooms and they're starting to turn, you can simply freeze them whole or sautee them and then freeze them. Then you can take your mushrooms out and use them anytime.
Charles and Shiyrah Crowther of Grandview Farm in Montevallo, Alabama have been cultivating shiitake mushrooms for about 15 years.
