Kale offers an earthy flavor with a nutty sweetness that is accentuated when cooked. It’s great sautéed, roasted, stewed, baked into kale chips, or added raw to smoothies, juices, and salads. Remove the spines of this leafy green or you can also cut the leaves into thin ribbons. A quick massage with olive oil, salt, and lemon juice will get you a slightly sweeter, much silkier kale.
