The Kellys first create our own southern fig preserves by slowly cooking locally-grown Alabama brown turkey figs with raw turbinado sugar. Then they fold the preserves into their fresh spreadable sheep cheese along with a pinch of fresh lemon zest. The result is a sweetly tart, bright, and creamy spread perfect for breakfast breads and desserts. You can eat cheese this with bagels, toast, pancakes, muffins, scones, shortbread cookies, pound cake, or anything else your heart desires!
Storage: stores frozen for up to 6 months or keep refrigerated and eat within 2 weeks of opening

Ana & Greg Kelly of Dayspring Dairy in Gallant, AL makes their cheeses by hand on their sheep farm. Sheep milk is much richer than cow or goat's milk, making it ideal for cheesemaking.
