French technique meets American barbecue in this delicious spread. Classically made with duck confit, we make ours by smoking chicken legs, then whipping the meat with freshly rendered bacon fat and seasoning to taste. Typically, rillettes would be capped with fresh duck fat to preserve the taste, but we choose to crown ours with our own bacon fat. We recommend removing the cap prior to consumption, but we won’t tell if you leave it in! It’s that good! Delicious on toast or crackers, on a sandwich, or in a taco. Made by our resident chef.

We use rotational grazing because it heals the land, creates more nutritious meat, and is better for the animals. They get fresh grass to munch on, the movement breaks the parasite cycle (removing the need for chemical treatments), and letting the grass rest a while makes the plants and soil healthier. Raising so many different species creates a synergy that improves the soil health, which in turn creates healthier animals, which ends up making you and me healthier.
